What is the difference in these two signs and the reasoning? Is one an older version? Most of the ones I see, the tail, front and back legs are removeable, rather than the other version where it's only jointed from the back legs and it's also higher up the leg. Are both versions always dated?

Glad you brought this up.

When it comes to Cookie Cutter Signs, I have always been puzzled to this date until I saw this thread ...

Now, I can update my binder wink

BTW, I prefer the bottom. I have a feeling it is harder to find than the top one. Am I correct?

I think both are made by Texlite. Would have to see both in person again to verify. I think they were made later for the two piece. again would have to verify. The two piece version is not seen as often. I would not pay more or less because of this difference.
They also made a one piece cookie cutter too. It was smaller and most are fakes. It is different than the flat one with the fork brackets on the back.
Dont ever buy a fiberglass cookie cutter unless you want a repop.

Then, was there a certain year when they changed?
